Olive Oil Citrus Poppyseed Loaf with Citrus Vanilla Glaze





Ingredients

  • 1¾ cups flour
  • 1½ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ¾ cup sugar
  • zest of 1 large lemon
  • zest of 1 lime
  • juice of half a large lemon (can reserve the other half for the glaze)
  • juice of half a lime (can reserve the other half for the glaze)
  • ½ cup milk
  • 3 large eggs
  • ? cups extra virgin olive oil
  • 1 tbsp poppyseeds
  • Citrus glaze (optional but highly recommended – see below for recipe)

Instructions

  1. Preheat the oven to 350 degrees F. Grease a 5X9 inch loaf pan.
  2. In a small bowl, whisk together the flour, baking powder, baking soda and salt.
  3. In another large bowl, combine the sugar and two zests: rub together with your fingers until the sugar is fragrant and moist.
  4. Add the lemon and lime juice, milk, and whisk to combine. Add the eggs and EVOO, whisk to combine.
  5. Add the flour to the wet mixture and whisk until smooth. Add the seeds last, stirring until they’re evenly distributed through the batter.
  6. Transfer the batter to the loaf pan and bake approximately 40-50 minutes until golden. A tester inserted into the cake should come out clean. Cool the loaf in the pan on a wire rack for 15 minutes.
  7. Remove the loaf from the pan and set onto the cooling rack.
  8. Using the tines of a fork or the tip of a knife, gently poke small holes all over the top surface of the loaf. Apply half of the glaze (recipe below) while the cake is still warm. When the cake has fully cooled, apply the second half of the glaze.

Citrus Vanilla Glaze

  • 1/2 cup heavy or whipping cream
  • 3/4 to 1 cup icing/confectioners’ sugar
  • tsp vanilla extract
  • the other half of the lemon juice
  • the other half of the lime juice

1. While the loaf is baking, make the glaze. Mix all the ingredients together in a small bowl. If the glaze is too thin, add more icing sugar. If it’s too thick, add more juice, milk or cream.

2. If using the glaze, refrigerate the loaf because of the heavy/whipping cream. You don’t want it sitting out for too long
